So you’ll have read that I’ve experimented with slow cooker hot chocolate recipes in the past but sadly without success. They’re far too sweet for me.
But hold on. I have an alternative for you…

A few weeks ago I had a heavy cold. I needed to procrastinate. My rear-end needed some sofa time. And I craved comfort food. So I decided to experiment with a gingerbread latte recipe.
It was a hug in a mug and I dipped into the crock pot all day long.
I served it alongside a huge portion of self-pity as I sat watching Home and Away catch up (don’t judge people!). It was a joy. So I thought I might share the recipe on here.
Now you don’t need to feel poorly to enjoy this winter warmer in your cosy home. Perhaps to celebrate the start of December? To drink while you put up your Christmas decorations? Or after your long winter dog walk this weekend? Or perhaps ready for you on your return from your festive shopping spree.
Make it with decaf coffee and the kids might like it too.
I’ve made gingerbread latte a few times now, adjusting the recipe each time. So these proportions work quite well for me as I don’t like it too gingery (I know, I know, it’s a ginger-based drink!). But up the ginger content if you prefer yours with slightly more ginger punch.
- Add all the ingredients to your pan and set on low for 3-4 hours in your slow cooker or make on the hob in a saucepan, warming on very low for at least an hour.
- Serve with whipped cream and sieved cocoa.
- Serves 6-8 people.
